The Lime Caviar Company’s Ian and Margie Douglas are no stranger to awards and now they have a new one to add to the cabinet.
The couple’s latest innovation, 100 percent Australian finger lime pearls, were recently named as a state finalist in the Delicious Produce Awards.
The concept was aimed at offering customers more ways to enjoy the finger lime, by designing a machine which scoops the ‘pearls’ from the skin.
They are frozen in such a way that they remain loose and spoonable, an easy addition to drinks, desserts and other meals.
The pearls have no additives, no preservatives, no artificial colouring and are gluten and allergen free.
“Lime caviar is an innovative product and we think this will revolutionise the way finger limes are used,” says Ian.
“This product will be available year-round and can be stored in your freezer for 10 months or more. It’s fresh in taste and appearance and comes in two colours – green and a pink/red.”
The new product is available in Queensland from the Gasworks Market, Ferry Road Markets Southport and is distributed by Simon Johnson Providore, Black Pearl Epicure, Australia on a Plate and Jimele Food Providore.
The Lime Caviar Company farm is at Running Creek, via Rathdowney. Fruit is harvested between January and June each year and the farm features a number of varieties, including Emerald, Yellow, Alstonville, Rainforest Pearl and Byron Sunrise.
The Lime Caviar Company customers hail from around Australia, as well as France, Holland, Italy, Spain, Singapore and Hong Kong.
The Delicious Produce Awards are a celebration of Australia’s bounty of ethical, sustainable and innovative ingredients. Now in the 13thyear, the awards aim to spotlight new and native products. National judging will occur in August.
