Behind the boarded up shopfront of the old Everydays Cafe in Beaudesert, a new and exciting venture is brewing.
Toni and Andy Cooper, the couple behind Valley Kitchen Kooralbyn, are giving Everydays a revamp and will reopen it as VK Everydays Cafe and Coffee House.
It will be the Coopers’ third hospitality venture in the Scenic Rim alongside take away shop Eat at 131 Kooralbyn and their popular licensed sit-down venue, Valley Kitchen Kooralbyn.
Anticipation is building for the completion of VK Everydays, and they hope to open by the end of July.
The plan is to start as a daytime operation, 6.30am to 4.30pm Monday to Friday, with a goal to one day make VK Everydays a licensed venue.
Toni – whose passion is making coffee and baking quality goods for the shop – said she and Andy were growing their team to support the new venture.
“Doing it together as well as we can is just the way we operate, and we’re so lucky to have a great team and some incredible young people working for us,” she said.
“We like to open new businesses – it gets the old fire in the belly going again.”
Andy – a chef focused on good old fashioned cooking and service – said it was an exciting time.
“When this came up, it felt like a serendipitous opportunity and we just thought, ‘we have to give this a go’ – we like a good challenge,” he said.
“There’s been this sense of anticipation about it all. It’ll be nice to reveal what we’ve done here, and we hope people will be happy with it.”
Andy and Toni are keen to include Scenic Rim ingredients in their menus, and encourage any local food producers to contact them at valleykitchen@gmail.com
